Organic Watermelon Sweet Roots Salad

Nothing says summer like biting into a juicy, perfectly ripe watermelon. Chock full of vitamins and minerals such as lycopene, folate and magnesium, there’s no better snack to beat the summer heat.

As much as we enjoy watermelon on its own, we couldn’t resist getting creative in the kitchen by combining it with our produce Packs. The result: a recipe for “Watermelon Sweet Roots Salad.” We paired the earthiness of our Juicero Sweet Roots pulp with the brightness of fresh, organic watermelon for an antioxidant-packed salad that is equal parts flavor and nutrition. Added bonus? It only takes a few minutes to prep (read: more time at the beach for you).

Ready to seriously step up your summer lunch game? Here’s the recipe:

Ingredients:

  • 1 pack Juicero Sweet Roots pulp**
  • 1/4 cup small diced watermelon
  • 2 TB diced radish
  • 1/2 tsp chopped fresh thyme
  • 1 tsp lemon juice
  • 1/4 cup chopped raw walnuts
  • 2 TB raisins
  • Pinch of salt

**After pressing your Juicero Sweet Roots juice, cut open the bag and scoop out the pulp with a spoon.

Directions:

  1. Add Juicero Sweet Roots pulp to a mixing bowl. Inspect for lemon seeds or any large chunks of fiber and discard.
  2. Add the remainder of the ingredients to the bowl and mix well with a wooden spoon.
  3. Serve in lettuce cups, or over chopped romaine.
