We’ve all heard it before: breakfast is the most important meal of the day. But the busier our mornings get, the harder it is to find time to make something healthy. Luckily, we’ve got the perfect solution. Overnight oats are a time-crunched person’s secret breakfast weapon, since they take just a couple minutes to prepare before bed. With just a few finishing touches in the morning, you’ll have a healthy breakfast to take on-the-go, or maybe enjoy with your favorite Juicero (just sayin!)

The opportunities are endless, but here are 2 of our favorite vegan renditions of overnight oats:

PB&J Overnight Oats

Juicero Vegan Overnight Oats Recipes

Ingredients:

  • 2 tablespoons chia seeds
  • 1/2 cup gluten-free rolled oats
  • 2 cups vanilla almond milk (or use unsweetened and add a dash of vanilla)
  • 1 cup strawberry preserves, divided
  • 2 tablespoons peanut butter, divided
  • 1/2 cup sliced strawberries, bananas or a mixture of both

Directions:
1. Combine the chia seeds, rolled oats, and almond milk in a jar or tupperware.
2. Mix well and stick in the fridge to soak overnight. The mixture will thicken as the chia seeds expand.
3. In the morning, mix the refrigerated ingredients to combine evenly.
4. Using a separate jar, begin with one layer of the chia oats mixture, then add a thin layer each of peanut butter and strawberry preserves. then each layer to the jar. Repeat as needed to fill the jar. The mixture should be about 3:1 oats to PB&J.
5. Top with sliced banana, strawberries or whatever you wish!

Sweet & Crunchy Overnight Oats

Ingredients:

  • 2 tablespoons chia seeds
  • 1/2 cup gluten-free rolled oats
  • 2 cups vanilla almond milk (or use

  • 2 tablespoons maple syrup, divided
  • 1/2 cup granola
  • 1/2 cup blueberries

Directions:
1. Combine the chia seeds, rolled oats, maple syrup and almond milk in a jar or tupperware.
2. Mix well and stick in the fridge to soak overnight. The mixture will thicken as the chia seeds expand.
3. In the morning, mix the refrigerated ingredients to combine evenly.
4. Top with a layer of granola, blueberries or whatever you wish!
